This weekend, New York holds its first of two annual Maple Weekends (March 22-23 & March 29-30).

That’s when producers show their goods to the masses. And while it's been very cold, they're not losing hope that it will be a great season.

“There's not much I don't like about maple syrup,” said Joy Herfurth, a maple farmer.

Joy Herfurth loves eating syrup yes, but her real passion is taking it from stump to jar.

While much of March has been too cold for sap production, Herfurth's already had some success this year at her farm, Brook Maple Farm in Ellenburgh Center, New York.

“We were pretty proud because we caught the first one for us in February and made syrup,” said Herfurth.

But that's been about it so far.

“It's been a slow start to the season but it's been slow to start before. In 2011, it started in the middle of the month and we still had one of the best crops we've ever had. So I think that if it starts warming up soon, we're in for a good season,” explained Herfurth.

She'll be happy when temperatures stick between 30-50 degrees. She calls that her “sweet” spot, no pun intended.

Two of her favorite weekends a year are New York's annual Maple Weekends, when she opens up her doors to people interested in knowing more about our area's favorite topping.

“I think it's important for people to know where their food comes from,” said Herfurth. “I also think it's important for the maple industry so that people realize the work that goes into making their maple syrup."

With 2,000-3,000 gallons of syrup pumping out of her small farm every  year, Joy Herfurth is proof that a lot goes into making one of Joy’s  biggest joys.

Interesting point, a few years ago Joy's entire crop was ruined when it was too warm too early so maybe the cold isn't too bad, at least for her.

New York's Maple Weekends are the next 2 weekends, March 22-23 & March 29-30.
