It’s all about the food at this Cool School! Barre Town School’s chef Bob Hildabrand, of the Abbey Group, shows us how to make after school snacks that students can make!

- nonstick cooking spray
- 2-1/2 cups quick cooking oats
- 1 quart greek yogurt, vanilla, fat free
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1 egg
- 2 tablespoons cornstarch
- 4 cups frozen or fresh fruit (we used blueberries)
- flour if needed to separate frozen fruit
Heat oven to 350, in a bowl mix oats, 3/4 cup yogurt, and brown sugar. Press out oat mixture evenly in bottom of pan. In a large bowl whisk egg and cornstarch. Add the rest of the yogurt and white sugar, stir until blended. If using frozen fruit toss 1 3/4 cup berries into batter, pour evenly over crust. Bake for 1 hour or until toothpick inserted into the center comes out clean. Cool at room temperature for 30 minutes, refrigerate for at least 2 hours before serving. Garnish and enjoy!
Strawberry Cheesecake Snacks:
- whipped cream cheese
- graham crackers
Mix equal parts strawberry jam with whipped cream cheese. Place on top of graham cracker and garnish with strawberry!
Fruit Juice Jellies:
- Grape or apple juice
- two packets plain gelatin
Mix 2 plain gelatin packets with 2 cups grape or apple juice. Dissolve over heat. Place mixture in 9×9 cake pan and refrigerate until solid.
