Food blogger Nancy Mock of Hungry Enough to Eat Six kicked off our Wednesday morning with some delicious Chocolate Chip Cinnamon Rolls and Toffee & Coconut Sweet Buns.

From breakfast to lunch and dinner, we got to work on some pepperoni stromboli and chicken enchiladas with Susan Whitman and Amy Gifford of Richmond Community Kitchen. Located at 13 Jolina Court in downtown Richmond, Vt., the Richmond Community Kitchen offers prepared meals in freezers and a refrigerator, ready for you to take home, defrost or pop right in the oven and serve. It’s great for a busy family; good food prepared with as many locally sourced ingredients as possible. They also offer cooking classes and a beautiful event space for rent.

Lastly, we tackled some tartlets with Nancy Mock. She showed us how to whip up Lemon Curd and Pistachio Tartlets and Orange Curd Bites with Maple Cream and Chocolate.

Richmond Community Kitchen also hosts a ‘Feed It Forward‘ program. By tipping, rounding up your bill or making a donation, you are helping to provide healthy meals to low-income families or fund scholarships to cooking classes.
