Steamed Asparagus with Olivia’s Parmesan Pepper Croutons

● 1 lb. fresh asparagus
● 2 Tbsp. melted butter
● 1 Tbsp. lemon juice
● ¾ cup Olivia’s Parmesan Pepper Croutons, gently crushed
● Salt and Pepper to taste

Wash and remove ends of asparagus. In a shallow pan bring about 1” of water to boil. Add asparagus and cover for 3 minutes. While asparagus is cooking melt butter and add lemon juice. Remove asparagus to a serving plate. Drizzle with lemon butter. Salt and Pepper to taste. Sprinkle with crushed Olivia’s Parmesan Pepper Croutons and serve.

Olivia’s TGIF Bloody Mary

● 1 LONG work week (sigh…yeah we got that!)
● 2 Cups Tomato Juice
● 4 TBSP Lemon Juice
● 2 TBSP Lime Juice
● 1 cup Vodka
● Dash of hot sauce…keep dashing depending on how long your week was…
● 1 TBSP Horseradish
● 3 TBSP Worcestershire Sauce
● 1 tsp celery salt
● 1 tsp cracked black pepper
● 1 cup ice plus more for shaker

For the garnish:
● 1 stick of celery
● 1 sprig of rosemary
● 1 cup of croutons (crush or blend 3/4 cup of croutons, set aside remaining 1/4 cup

Rim glass with olive oil (this helps the salt and crushed croutons stick to the glass better than water) Tip the glass upside down and push / twist into a shallow bowl or plate of crushed croutons and salt. Fill glass with ice, stick of celery, and rosemary sprig. Combine all drink ingredients in shaker. Shake it. Shake it like a Polaroid picture…you know what to do. Pour into prepared glass . Top with handful of Olivia’s Croutons and remaining garnish ingredients. Enjoy!

Simple Caesar Salad with Parmesan Pepper Croutons

● 3­4 cups washed and torn romaine
● 1/2 small lemon
● black pepper
● 1 clove garlic
● 1/2 cup fresh grated parmesan
● 1/2 bag of Olivia’s Croutons
● your favorite Caesar dressing to taste,

Split garlic clove and thoroughly rub inside of wooden salad bowl, add romaine, squeeze lemon over romaine and toss, add dressing (not too much!), Parmesan cheese and toss again, adding pepper to taste, add croutons and toss lightly one more time. This is a great salad anytime but especially in winter when produce can be iffy!

Olivia’s Caesar Dressing

● 1/2 cup olive oil (the more virgin the better)
● 1­2 garlic cloves
● 3­5 anchovy fillets (optional)
● 2 Tbsp. mayonnaise
● 1/2 tsp. black pepper
● 1 Tbsp. Balsamic vinegar
● juice of 1/2 large lemon

Combine all of the above ingredients in a food processor or blender (you may need to cut up your garlic for the blender). Blend until smooth. Use or refrigerate.

Baked Eggs with Parmesan Pepper Croutons

● 4 eggs
● 1/2 cup Cheddar cheese
● 1 cup Olivia’s Parmesan Pepper Croutons.

Beat eggs until frothy. Pour into buttered baking pan. Sprinkle with croutons. Top with cheese. Bake at 350 degrees for about 15 minutes, until firm.

Mac & Cheese

● 1 Box Penne Pasta
● 1 Bag Olivia’s Croutons (whole & crushed)
● 1 Cup Cubed Smoked Gouda
● 1 Cup Cubed Monterey Jack
● ½ Cup Heavy Cream
● 1 Cup Whole Milk
● 4 TBSP Unsalted Butter
● 4 TBSP Flour
● ¼ Tsp Nutmeg
● Salt and Pepper to taste

Cook pasta and set aside. In sauce pan on medium heat melt butter. Add flour and whisk until combined. Add cream and milk, whisk until combined. Slowly stir gouda and monterey jack cheese until melted and sauce is smooth. Add nutmeg, salt, and pepper. In a buttered casserole dish add pasta. Pour cheese sauce over pasta, add whole croutons. Top with crushed croutons. Bake at 350 degrees for 10 minutes or until bubbling. Remove from oven and let rest for 5 minutes before serving. Enjoy, this is comfort food at its best!

Picnic Chicken Wings

● 1 lb Chicken Wings
● 1 Bag of Olivia’s Parmesan Pepper Croutons, crushed
● 1 Cup Parmesan Cheese, grated
● 2 Eggs, whisked
● 1 TBSP Oil for baking sheet

Recipe​: Preheat oven to 420 degrees. Mix together crushed croutons and grated Parmesan cheese in a medium sized bowl. In another bowl, whisk eggs. Dip chicken wing in egg and then toss in crouton/Parmesan mix, place on lightly oiled baking sheet. Repeat until all of the wings are coated and placed on baking sheet. Place chicken in preheated oven and bake for about 20 – 25 minutes or until chicken is cooked through and breading is golden brown. Remove from the oven and let rest for about 5 minutes
